Old Tom Gin

The name "Old Tom" is said to have originated from wooden plaques in the shape of a black cat (an "Old Tom") which were mounted on the external walls of some London pubs. Thirsty patrons placed a coin in the cat's mouth and, in return, a shot of gin was dispensed from a pipe beneath the cat.
It is known for being slightly sweeter than Dry Gin and drier than Dutch Genever, falling somewhere in the middle.
Gin Dolce is characterized by a slightly sweeter profile, obtained from care, precision of the production process and a careful selection of raw materials, ripe juniper berries and very high quality cereal alcohol, to guarantee the aromatic profile and high purity of the Gin and the addition of Italian beet sugar.
Its mouthfeel is full and viscous compared to the freshness of Dry Gin.
Gin Dolce can be used in classic cocktails such as the Tom Collins or the Martinez, as well as in modern mixes that benefit from its unique flavor profile.
